Makes 12 muffins
Ingredients
1 cup all-bran cereal
3/4 cup milk
1 egg
2 1/2 tsp. baking powder
1 tsp. salt
1/2 cup seedless raisins or chopped dates
Instructions
Combine bran and milk in a small bowl and let soak 5 minutes. In a large bowl beat egg and stir in molasses, oil and bran mixture. Sift dry ingredients together and add to egg mixture. Stir only to blend. Fold in raisins or dates. Spoon into well-greased muffin tins, filling 2/3 full.
Bake in preheated oven at 400F for 25 minutes.
Hints: For dark muffins use dark molasses.
You can also increase the molasses to 1/2 cup or add spices such as cinnamon or nutmeg.
