Blueberry Streusel Muffins

Makes 12 muffins

Blueberry Streusel Muffins

Ingredients

2 1/2 cups flour
1 cup sugar
1 tablespoon baking powder
1/2 tsp cinnamon
3/4 cup margarine
3/4 cup milk
2 eggs
1 1/2 tsp vanilla
1 cup of fresh or frozen blueberries

Streusel topping
1 tablespoon brown sugar
1/2 tsp cinnamon

Instructions
Preheat oven to 375F. 
Mix streusel topping ingredients and set aside.
Mix muffins ingredients lightly. Pour in muffin pans and sprinkle Streusel topping on top of muffins. Bake at 375 F for about 15 to 20 minutes.


Hint from Gil: 
Replace blueberries for blackberries.  Make  blackberry sauce for topping, see below. 

1 cup of berries
1 tbsp of sugar
1/4 tsp cornstarch
Add ingredients to pot and cook until thickened. Place 1/2 tsp of sauce on each muffin before cooking.
Can try this with raspberries.

Agnes' Variation: Double Blueberry Muffins
Decrease sugar by 1/4 cup. Increase blueberries by 1/2 to 3/4 cup.
Make Blueberry sauce for top:
1 cup of blueberries, fresh or frozen
1 tbsp of sugar
1/4 tsp cornstarch
Add ingredients to pot and cook until hot. Mash blueberries. If too thick add 1/2 tsp or more of water. Place 1/2 tsp of sauce on each muffin before cooking.
