Salmon Vegetable Casserole

Ingredients
1 cup of diced potatoes
3 carrots, sliced
1/2 cup of peas
1 small onion, chopped
2 tbsp. of butter or margarine
2 tbsp. of flour
1 1/4 cup of milk
dash of pepper
2 tsp. of chopped parsley
2 cans of flaked salmon (14oz) or cooked salmon cut into small pieces
2 cups of Biscuit mix (see recipe under Breads)

Instructions
Cook potatoes, carrots and peas in water until tender; drain; reserve 2/3 cup of water.
Cook onion in butter until tender; remove from heat.
Add flour and stir until smooth; add vegetables, water, milk, pepper and parsley.
Cook until thickened; stir.
In a small greased casserole, arrange alternately a layer of vegetable and seafood. Cover with sauce.
Prepare biscuit mix according to directions on package.  (Stir 2 cups mix and ½ cup water.)
Pat out to fill casserole. Cut small slits in dough.
Bake 425F oven for 30 minutes.
