Sausage and Pasta

Serves 4
Cooking the finely chopped onions first makes a big difference for this meal. Easy to adapt for less or more servings.

Sausage and Pasta

Ingredients

1 box short pasta, penne or fusilli, 375g
2- 4 tablespoon olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 to 2 peppers, yellow, orange or red, thinly sliced
1 to 2 cups green vegetables,try broccoli tops, cut in bite size pieces, snow peas, halved, and/or zucchini chopped
1 carrot, peeled and cut into sticks,  2" long and 1/4 " thick
2 - 4 cooked mild sausages, sliced, try mild Italian
2 tsp balsamic vinegar, or 1 tsp balsamic reduction
Salt and pepper, to taste
1/4 cup grated cheese, to taste(optional) try cheddar, parmesan or Romano

Instructions
Prepare pasta according to package directions.

Heat oil in large frying pan over medium heat. Add onion and garlic, cook for 5 minutes or until tender. Add rest of vegetables to pan and cook for 4 minutes or until softened. Add sausage and cook until heated through.

Toss hot pasta with sausage mixture. Add balsamic vinegar, stir. Season with salt and pepper; sprinkle with cheese (optional).
