Best Two-egg Cake

Best 2 egg white cake recipe.
Works well with margarine. Below is the original recipe.

Best Two-egg Cake

Ingredients

½ cup shortening
1 ½ cups sugar
1 tsp. vanilla
2 eggs
2 ¼ cups sifted cake flour
2 ½ tsp. baking powder
1 tsp. salt
1 cup plus 2 tbsp. milk

Frosting to taste.

Instructions
Stir shortening to soften. Gradually add sugar, creaming thoroughly for 12 to 15 minutes at medium high speed on mixer. Add vanilla. Add eggs, one at a time, beating well after each. Sift cake flour with baking powder and salt; add to creamed mixture alternately with milk, beating after each addition. Bake in 2 paper-lined  9 X 1 ½ inch round pans at 375F for about 23 minutes.
Frost as desired.

Hint: Use whipped cream for an easy frosting. Keep refrigerated if you use whipped cream for the frosting.
Decorate with fresh fruit, if desired.
