Ingredients
Date Filling:
1 cup chopped dates
1 tsp. brown sugar
½ cup water
Two orange slices
Crumb mixture:
1 cup flour
½ tsp. salt
1 cup butter
1 cup lightly packed brown sugar
2 cups rolled oats
Instructions
Date Filling: Combine in a saucepan the following:
Bring to a boil and cook for about 5 minutes until the dates are soft enough to be mashed with a fork. Remove the orange. The mixture should be the consistency of jam. Set aside to cool.
Crumb mixture: Blend the flour and salt. Cut in the butter and add the sugar and oats.
Press half the crumb mixture over bottom of a greased 9x9 pan. Cover evenly with cooled date filing, then cover with remaining crumb mixture. Pat until smooth.
Bake in a pre-heated oven for 35-45 minutes until light golden brown. Cool and cut into squares.
