Potato Candy, Homemade Chocolates

Ingredients
1 potato, pared and cut up
3 to 3 1/2 cups icing sugar, sifted
1 1/2 cups shredded coconut
1 tsp. vanilla
4 squares unsweetened chocolate

Instructions
Cook potato until soft. Drain and mash with a fork. Work in icing sugar with a wooden spoon. Blend in coconut and vanilla. Mix, mixture should look like a very thick icing. Shape into two rolls 1 1/2 inch in diameter. Wrap individually in wax paper. Chill until firm (about two hours, but preferably overnight). Shape into one-inch balls. Dip in melted chocolate. Cool and rewrap. Store in the refrigerator or the freezer until ready to serve.

Variation:   Makes homemade filled chocolates; therefore, you can use any flavoring, nuts or food color to the filling. Try the following: Maple flavoring and chopped walnuts, Vanilla, Coconut, Chocolate, Mint flavoring and a bit of green colour, Cherry flavoring (or use some juice from cherry jar) and chopped maraschino cherries, or wrap the dough around the whole cherry and then dip into the chocolate.  Spread on a greased cookie sheet and refrigerate.  Does not require baking.

Comment: 
Make your favorite flavors, like pink with cherry pieces, green color with mint flavoring, and white chocolate with coconut. Let the kids mix their own in a small batch. Kids love maple with walnut pieces.
