Makes 12 servings
Ingredients
1 cup chopped dates
1 cup hot water
½ cup butter or margarine
1 cup white sugar
1 tsp. baking powder
1 egg slightly beaten
1 ½ cup flour
1 tsp. baking soda
1 tsp. vanilla
Cake Glaze:
1/3 cup margarine
½ cup canned evaporated milk, or 35 % cream
1 cup brown sugar
1 tsp. vanilla
1 cup coconut
Instructions
Boil hot water; add dates and butter. Soak for a few minutes and cool before adding to the rest of cake ingredients.
Mix white sugar, baking powder,egg, flour, baking soda, vanilla and the cooled date mixture. Bake in a springform pan.
Bake at 350 F for 30 minutes, until toothpick inserted in centre comes out clean. Meanwhile prepare the glazing.
Cake Glaze: Mix margarine, evaporated milk, brown sugar, vanilla and coconut in saucepan. Boil mixture for 5 minutes and put on cooked cake and bake cake another 10 minutes.
Serve warm or cold.
