1/2 cup butter or margarine
3/4 cup sugar
1/4 cup light brown sugar, firmly packed
1 egg
1/2 teaspoon almond extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups uncooked old fashioned oats
1/2 cup almonds, chopped or sliced
1/2 cup semi-sweet chocolate pieces
1/4 cup shredded coconut
Instructions
Preheat oven to 350 F. Grease two baking sheets.
In a large bowl, beat the butter with an electric mixer on high speed until butter is smooth and creamy. Gradually beat in the sugars on medium, beating until mixture is creamy. Add the egg and almond extract, and beat just until combined.
Stir flour, baking soda, and salt into creamed mixture until thoroughly combined. Add oats stirring until blended, then add almonds, chocolate pieces and coconut. Stir just until blended.
Divide the dough into 8 equal portions. Place 4 portions about 2 inches apart, on each baking sheet. Flatten slightly. Bake on middle rack for 15 to 18 minutes. Remove from baking sheet three minutes After removing from oven wait three minutes, then remove cookies with large spatula to wire cooling rack to cool.
