Flattened Chicken with Vegetables

Flattened Chicken with Vegetables

Ingredients
One whole chicken, flattened
5 potatoes, chopped or 12 small potatoes
4 carrots, chopped
10 mushroom, sliced
2 red or green peppers, chopped
1  sweet potato cube vegetable
1/4-1/2 cup vegetable oil
1/2 cup of white wine

Marinade sauce
3 tablespoons piri piri sauce
1 tablespoon rice vinegar
1 tablespoon soya sauce, reduce salt
2 tablespoons wine vinegar
1 tablespoon grapeseed oil or avocado oil

Instructions
Mix marinade sauce ingredients. Place flattened chicken and marinade in a bag or glass dish. Marinade for 24 hours or less.
Preheat oven to 425 F.
Place vegetables on bottom of large baking dish. Place chicken, breast side up on top of vegetables and pour oil over chicken. Add white wine to bottom of dish. Loosely cover dish with foil. Bake in preheated oven for an hour, remove foil and bake 20 minutes until chicken is cooked and golden.

Hint:
To Flatten Chicken, turn chicken breast side down on a cutting board. Using a knife or kitchen scissors, cut out the backbone and discard. Remove excess fat.
