Tofu with Red Cabbage

Tofu with Red Cabbage

An easy recipe to do with children and to experience some out of the ordinary ingredients.

Ingredients
1 lb firm tofu, drained
1 tablespoon olive oil
1 red cabbage, shredded
2 apples, cored and chopped
1 red onion, diced

4 servings or 2 cups cooked rice

Tofu Marinade and sauce:
2 tablespoons low sodium soya sauce
1/2 tsp sesame oil
2 tablespoons olive oil
1 tablespoon honey
1/2 tablespoon chili garlic sauce

Instructions

In a small bowl whisk together marinade ingredients.
Cut tofu into pieces and place into glass pan. Pour marinade over tofu and let sit while preparing vegetables, about 20 minutes.
Preheat cast iron frying pan. Add 1 tablespoon oil, add cabbage, apples and onion. Cook 5 minutes, stirring occasionally. Gently add tofu and cook 10 minutes or until tofu and vegetables are cooked.
Serve over cooked rice
