Red Cabbage, Sausage and Apple


An inexpensive way to serve a large groupe of friends. 
You can make a vegetarian version by simply using tofu instead of sausage and vegetable stock instead of chicken. 

Ingredients
1 onion chopped
4 small spicy Italian sausages skin removed and sliced
2 apples chopped
1/2 large red cabbage chopped
3 garlic cloves chopped
2 tbs cider vinegar
1 cup white wine
1 cup chicken stock
2 tbs Dijon mustard
2 tsp paprika
1 tsp cumin seeds
2 tsp piripiri spice (or something else flavorful and a bit spicy)
Olive oil













Instructions
Preheat oven at 375 F
Coat oven proof dish with olive oil.
Chop onion, sausages, apples, cabbage and garlic.
Mix vinegar, wine, chicken stock and mustard.
Mix paprika, cumin and piripiri
Put onion, sausages and garlic in pan.
Cover with cabbage and apples.
Sprinkle spice mix evenly on top.
Pour liquid mix slowly and evenly on top.
Bake covered for 45 minutes.
Bake uncovered for 15 minutes.
