Serves 4
Ingredients
3-5 cups penne pasta, uncooked
Pesto Sauce instructions
2-3 garlic cloves
2 cups fresh basil leaves, lightly packed
1/2 cup extra virgin olive oil
1/2 cup Feta cheese, crumbled, about 3 oz.
1/4 cup walnuts, chopped
Instructions
Cook penne noodles according to instructions. Meanwhile make pesto sauce.
Pesto Sauce
Using blender or food processor add garlic, basil leaves and olive oil. Process until smooth. Add feta cheese and walnuts and process just until the cheese is blended into the mixture. A good sauce consistency is similar to heavy cream. If the sauce is too thick add extra oil or water a teaspoon at a time and blend.
Serve immediately over cooked pasta. Refrigerate leftovers.
Notes:
Adding Feta cheese a bit at a time in blender is my preferred method.
Using two tablespoon of dried basil instead of fresh basil is possible in a pinch. See Pesto Pasta recipe.
