Salmon Baked in Cast Iron Pan

Salmon Baked in Cast Iron Pan

Ingredients
2 salmon fillet, 113 g each, or one large salmon fillet pieces that fits pan
1 ½ tsp olive oil
¼ tsp Old Bay Seasoning, 30% less sodium
Pepper to taste
Fresh dill to taste

Instructions
Rub  12" cast iron frying pan with oil. Place pan in oven. Turn oven on to 375F.
Meanwhile, place fish on a plate and rub with oil. Sprinkle with old bay spice, pepper and dill.
Once oven is pre-heated, gently place fish, skin side up and bake for 1-2 minutes, gently flip fish skin side down. Caution: pan is very hot.
Bake until fish flakes. Remove fish from pan immediately. Serve with crispy potatoes.

Note on cast iron: 
Warning: Cast iron stays hot for awhile after placing in oven, and the handle will be very hot.
Cast iron works best if oiled and pre-heated before adding fish.
You can turn oven off when fish starts to flake and leave fish in pan to continue to cook, cast iron retains heat for awhile and fish will keep cooking.
