Winter Squash with Apple Stuffing |
Ingredients
1 winter squash such as butternut or acorn, cut in half
Butter
Olive oil
1 onion, chopped
2 apples, cored and chopped
1 pre-cooked sausage, sliced
4 oz soft goat cheese
1 cup shredded cheese
1/4 cup fresh squeezed lemon juice
2 tablespoons raisins
1/4 tsp cinnamon
1/4 cup walnuts, chopped
Instructions
Preheat oven to 350.
Cut squash in half. Bake squash cut side down for 30 minutes in preheated oven. Meanwhile, in frying pan preheat butter and olive oil. Add chopped onion and apples and cook until onions are translucent. Add sliced sausage to onions. In large bowl, mix goat cheese, shredded cheese, lemon juice, raisins and cinnamon. Add onions, apples and sausage mix to bowl and stir stuffing gently. Top squash with apple stuffing. Top with walnuts. Bake 30 minutes at 350, until heated thru.
Delicious recipe. Sue made it and suggested ingredients. I added one grated carrots, 10 diced mushrooms, orange peppers, ground sausage meat instead of sausage, used feta cheese instead of goat cheese, added a more cinnamon.
ReplyDeleteMade A faster version. I pre-cooked the cut in half squash in microwave, then scooped a bit of meat and mixed with it with apples, blue cheese, baked sausage, walnut and cinnamon. Baked until read. Fast supper.
ReplyDeleteToday I put a quarter cup of almond flour in the cheese mix instead of nuts on top.
