Instant Pot Mushroom Soup

Serves 3 or more
Really good mushroom soup. Great to serve as a lunch or side dish for Thanksgiving.

Instant Pot Mushroom Soup 


Ingredients 
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic,  minced
4 cups mushrooms, about 20 medium  mushrooms, diced 
½ cup celery, one stalk, diced
2 cups vegetable broth
½ cup coconut cream 
1/2 tsp salt
1/4 tsp black pepper

Toppings
½ cup sautéed mushrooms (optional)
2 tablespoon cilantro 
2 tablespoons cream

Instructions
Preheat oil in Instant Pot on Saute setting. Add onions and saute until soft.
Add mushrooms and celery and saute about 6-8 minutes or until no juice is left from the mushrooms. 
Add vegetable broth, coconut cream, salt, and pepper.
Stir, scraping bottom of pot to avoid the burn setting warning.

Place lid on the pot and pressure cook for 5 minutes.

Wait at least 5 minutes to release pressure.

Serve with toppings.

  1. Very tasty. Cooked soup for 10 minutes on soup setting on Instant Pot.
