Garlic Soup |
Ingredients
1 onion, chopped
1 large leek or 1/2 flat cabbage, chopped
2 heads of garlic, peeled
Salt, pepper, cinnamon, cayenne and tarragon to taste
3 large carotts, chopped
2 large baking potatoes, chopped
4 cups chicken broth
1 cup milk
Oil
Instructions
Cut all vegetables coarsely.
Add a bit of oil to large pot. Once preheated, add leek and onion and sauteé 2 minutes.
Add cabbage and garlic. Sauté two more minutes.
Add seasoning and mix.
Add carrots, potatoes and broth.
Bring to a boil then turn off stove and leave covered for 40 minutes, or simmer for 40 minutes.
Strain out vegetables and purée in blender or food processor.
Add milk to broth and bring to a simmer .
Add vegetables purée to broth, mix and serve with crouton or sour cream on top.
