Upside-down Stuffed Mushrooms

Serves 2 -4
No need to stuff mushrooms in this recipe.  Can be eaten as a delicious meatless meal or a side dish.

Mushrooms and spinach in pan
Upside-down Stuffed Mushrooms


Ingredients 
Vegetable oil 
2 garlic gloves, minced
1/2 red pepper, chopped
2 cups fresh baby spinach
1 pack Bella mushrooms,  about 12
1/2 cup grated parmesan cheese
1 tablespoon soya sauce
Salt and pepper to taste, optional

Instructions 
Preheat oven to 400 F.
Oil pan with vegetales oil. Add garlic, red pepper and spinach to pan.
Break up the stems of the Bella mushrooms. Add Bella mushrooms to pan, tops facing up. Make sure the mushrooms aren't touching each other.
Sprinkle mushrooms with 1/2 cup of grated parmesan. Sprinkle 1 tbsp of soya sauce over mushrooms and vegetables. Add salt and pepper to taste.
Bake for 15 to 20 minutes at 400F. Serve immediately.
