Lasagna

Serves 9 to 12
Great potluck recipe with garlic bread and Caesar salad.

Ingredients
1 lb ground beef
1 large onion, chopped
2-5 oz cans tomato paste
2 cups water
1 to 2 tablespoons dried parsley
2 tsp salt
½ tsp pepper
1 garlic clove, minced or 1/2 tsp garlic powder
½ tub cottage cheese, approximately 1 cup
1 egg
9 to 12 lasagna noodles
1 to 2 lbs shredded Mozzarella cheese
Approximately 1/2 cup parmesan cheese

Instructions
Cook onion and ground beef in pan until beef is no longer pink.

To make sauce: In a medium pot bring to boil and simmer for 1/2 hour: tomato paste, 2 cups water water, parsley, salt, pepper, garlic, hamburger and onion.

Meanwhile cook noodles: Half fill a large pot with water and a bit of oil. Bring water to boil. Add noodles. Cook the noodles for approximately 15 minutes and strain.

In small bowl mix egg and cottage cheese.

To assemble lasagna:
Put 1/3 of sauce in 9 inch x 13 inch baking pan, then add layers as follows:
a. Add a layer of noodles over sauce.
b. Add a bit of Mozzarella cheese and a 1/3 or 1/2 of the cottage cheese mixture.
c. Add a layer of noodles
d. Add sauce. Add a bit of Mozerella cheese and a 1/3 or 1/2 cottage cheese mixture. Add a layer of noodles.
e. Repeat "d." if you still have noodles and used 1/3 of the cottage cheese mixture. Finishing with noodles.
f. Add some sauce over noodles.
g. Finish with Mozzarella cheese and sprinkle the parmesan cheese of top.

Bake at 350° F for 30- 40 minutes. Let cool 15 minutes before serving.

Note: Can add a layer of cooked or frozen spinach in the center of the lasagna.
