Simple Roasted Cauliflower Soup


Makes approx. 6-8 servings, 2 litres
Great recipe to make in the fall when cauliflowers are in season.

Simple Roasted Cauliflower Soup
Ingredients
1 large cauliflower, roughly divided in pieces
2 large onions, chopped
4 cloves garlic, chopped
Thyme and oregano to taste. 
1 litre or 4 cups broth (or 2.5 broth cubes)
1 to 1 1/2 cups milk, depending on taste. Substitute milk with cream for a richer soup
Nutmeg
Lemon juice
Salt and pepper to taste

Instructions
Roast cauliflower on high heat in oven until the corners start to blacken. Roughly chop onions and garlic and sauté in a pot. Add cauliflower, cover with broth, and bring to a boil. Simmer approx. 20 minutes. Blend cauliflower until smooth. Stir in milk, add a healthy pinch of nutmeg, and a splash of lemon juice and return to heat. Simmer gently for approximately 30 minutes to thicken. Stir occasionally to prevent the milk from burning. Serve warm or cold. Goes very nicely topped with brown lentils and fried cheese.
