Best roast ever! So easy too, I didn't open the oven once.

Ingredients
4 lb ribeye roast
2 tablespoons olive oil
2 tablespoons butter, softened
6 garlic cloves, minced
Salt and ground pepper to taste
Instructions
Bring roast to room temperature for an hour. Pat dry.
Preheat oven to 475 F.
In small bowl mix olive oil, butter and minced garlic.
Rub mix over roast. Place roast in deep baking pan, fat up. Sprinkle with ground pepper and salt.
Place pan on top rack in preheated oven. Bake for 15 minutes at 475 F. Lower temperature to 275 F. Cook for one hour and 30 minutes. Turn off oven and let sit for one hour. DO NOT OPEN OVEN. Meanwhile cook the rest of your meal.
Goes well with gravy, fried mushrooms, glazed carrots and mashed potatoes.
