Sundried Tomatoes Pasta with chicken |
Ingredients
2 servings pasta, tortellini or other pasta
1 to 2 tablespoons olive oil
1/2 cup onion, diced
1 to 3 garlic cloves, minced
1 cup sundried tomatoes, diced
2 chicken breast, cooked and cut in small cubes, or 2 cups chopped cooked chicken, optional
1/4 to 1/2 tsp crushed red pepper
1 tsp dried oregano leaves, crushed or 1/4 tsp ground oregano
1/2 to 3/4 cup milk
1/3 cup Parmesan cheese, grated
Instructions
Cook two servings tortellini according to package instructions. Do not overcook. Drain and set aside. Make sauce while pasta is cooking.
Preheat olive oil in a medium size frying pan. Add onions and cook until onions are soft. Add garlic and tomatoes to pan. Cook for one minute. Stir in chicken, crushed red pepper and oregano and stir. Slowly add milk as needed to prevent ingredients from sticking to pan. Cook until chicken is hot. Reduce heat. Cover and simmer for 3-4 minutes, adding more milk to prevent ingredients from sticking to pan or burning. If pasta is ready, drain and add to top of sauce without stirring to keep pasta warm. Remove from heat, stir pasta and Parmesan cheese and serve.
