Blueberry Pancakes for One or Two

Serving 1 to 2. Makes 4 pancakes

Blueberry pancakes

Ingredients 
1/2 cup blueberries
1 to 2 tablespoon flour

Dry Ingredients:
1/2 cup flour
1 tablespoon sugar 
1 tsp baking powder
Sprinkle of salt

Wet ingredients:
1 egg 
1/2 cup milk
1 tablespoon vegetable oil or melted butter
1/8 tsp vanilla, optional

Instructions
Coat blueberries with flour. Set aside.
Add dry ingredients in a large bowl and mix. Make a hole in dry ingredients mixture. Set aside
In a separate bowl add egg and beat lightly with a fork. Add milk, vegetable oil and vanilla to beaten egg. Stir wet ingredients together. 
Pour wet ingredients in the dry ingredients. Stir gently with a fork until batter is lumpy. Do not overmix.
Add floured blueberries and stir gently.

Add vegetable oil in a frying pan and preheat at medium heat. Cook pancakes until they are filled with bubbles and the under-surface is golden brown. Turn and brown the other side. If they are cooking too fast and burn on the bottom, lower heat. Serve immediately with butter and maple syrup.
 
Makes about four 5 inch pancakes.
