Zucchini Cheese Sauce

A pasta sauce that is a nice change from tomato or rich cheese pasta sauces.

Zucchini Cheese Sauce with fusilli and shrimp


Ingredients
3 to 4 cups of shredded zucchini, squeeze excess juice
2 to 3 garlic cloves, minced
1/2 yellow onion, diced
2 tablespoons dried basil or oregano
3 tablespoons virgin olive oil 
1 lb pasta such as fusilli 
1 1/2 cups feta cheese, crumbled
1/2 cup Parmesan Cheese for topping
Salt and pepper to taste

Instructions 
Sauté garlic and onion in olive oil for 5 min, add the zucchini 10 to15 minute until soft. Add basil or oregano. 
Meanwhile, cook pasta. Drain and reserve 1/2 cup pasta water.
Add cooked pasta and cheese to zucchini mixture. Stir and add reserved water if needed to get a sauce texture. Move to oven proof dish. Sprinkle Parmesan cheese on top.
Let dish rest for 5 minutes. Serve immediately or keep warm in 300F oven until ready to serve. 

Variations:
Substitute pasta for chicken, shrimp, fish or veggies.
