Baked Pears with Blue Cheese

Baked Pears with Blue Cheese

Ingredients
1 tablespoon melted butter for baking dish
3 ripe Bosc pears, cut in half and cored
2 tablespoons honey or maple syrup
1/4 to 1/2 cup dried cranberries
1/3 cup chopped walnuts
1/4 cup crumbled blue cheese

Raspberries,  extra walnuts and extra blue cheese for topping
Salad, see note from Irene
Prosciutto, optional
Toasted bread, optional 

Instructions 
Preheat oven to 375°F. Grease baking dish with a bit of butter. 
Arrange pear halves cut-side up in  baking dish.
Add a bit a cranberries and walnuts in center if each pear.
Drizzle pears with honey or maple syrup. 
Bake for 25 to 30 minutes total in 375ºF oven or until pears have softened. Check after 20 minutes and add blue cheese on top of pears for last 5 minutes of baking. Bake until cheese is melted.
Meanwhile make salad.
Serve warm on top of salad. Sprinkle with raspberries, extra walnuts and extra blue cheese.
Serve with Prosciutto and dry toast, optional.

Note from Irene
Serve as a light main course, half a pear per plate with large salad.
Make a salad of romaine lettuce and finely grated carrots mixed with a dijon vinaigrette to which I add a bit of maple syrup and use apple cider vinegar. Serve half pear with a large serving of salad.
Serve with a dry toast.
