Very moist and sweet.
Ingredients
1 1/3 cups rolled oats or large flake oats
1 1/2 cups flour
1 tsp soda
1 cup brown sugar
3/4 cup butter, softened or margarine
Filling
1/2 lb or 2 1/4 cups loose dates
3/4 cup brown sugar
3/4 cup milk
Instructions
Mix first 4 ingredients in large bowl and stir. Cut in butter until butter chucks are no bigger than 1/4 inch. Take out 1 cup of the oats mixture to sprinkle on top of filling. Press remaining mixture into 9" x 12" baking pan. Press hard with hands or a flat spatula to form a firm even surface
Filling
Add dates, sugar and milk to small pot. Stir. Cook until soft on low heat. Stir occasionally, keeping an eye on dates. Depending on pot and temperature this might take an hour. Once dates are soft and mixture is thick, add dates to baking pan on top of oats mixture. Spread dates evenly.
Sprinkle 1 cup of oats mixture on top of dates.
Bake at 325F for 20 to 25 minutes or until top is lightly browned.
Cut into squares while warm, approximately 10 minutes.
Freezes well. Store in refrigerator.
