Ingredients
2 cups Bisquick mix
½ cup boiling water
2 tablespoon diced red peppers
2 tablespoon sliced green onions
1 cup gravy
1 can cream of chicken soup
2 cups cooked chicken cubes
½ cup mashed potatoes
Pepper to taste
Instructions
Mix Bisquick mix and boiling water until they form a dough ball. Let cool for 10 minutes. Roll into an 18 x 11 rectangle. Place the dough in bottom of an ungreased 8x8-inch pan. Let dough hang on sides.
Gravy mixture:
Boil red peppers and green onions in a bit of water for 2 minutes. Drain water. Add gravy and soup. Cook slowly until the mixture boils.
Mix chicken (or turkey) and potatoes and place on top of dough in pan. Pour gravy mixture on top. Add pepper to taste. Fold sides on top and grease edges with margarine. Bake in preheated 400°F oven for 45 minutes. Top will be browned.
Beef Pot Pie:
Use 3 cups of beef and 3 cups of cubed potatoes and 1 chopped onion. Cook potatoes and onion in beef broth, drain. Make gravy for 2½ cups. Put beef in pan on top of dough and sprinkle with garlic salt. Add potatoes and onions. Pour gravy on top and cook as for chicken potpie.
Hint: Great way to use up leftovers from Thanksgiving or Christmas turkey.
