Ingredients for filling
1/2 - 1 cup rice, uncooked
1 onion, diced
1 cup mushrooms, about 10 sliced or sliced
2 medium peppers, green and/or red, chopped or sliced thin
2 garlic clove, chopped
2 tsp - 1/2 tbsp cumin
Dash black pepper
1 - 2 cans black beans, drained
1 cup chopped tomatoes, about 1 large
1/2 cup of salsa
Salt to taste

6-8 large Tortillas
1-2 cups grated Cheese
1-2 cups chopped lettuce
1-2 Tomatoes
1 cup Salsa
Instructions
Cook rice according to instructions. Meanwhile in a large saucepan saute onion, mushrooms, peppers in oil until soft. Reduce heat, add garlic, cumin, and black pepper and black beans. Add tomatoes and salsa. Cook for about ten minutes on medium and then cover and turn to low heat until rice is ready. Add cooked rice and desired amount of salt and serve on tortillas with cheese, lettuce, tomatoes and salsa.
