Hollandaise Sauce

Makes approx 1/2 cup

Serve with asparagus and ham. Also delicious with salmon and dill.

Ingredients 
2 egg yolks
Juice of half a lemon
Cayenne pepper to taste
1/4 cup butter, melted

Instructions 
Mix together egg yolks, lemon juice and cayenne pepper in microwave safe bowl.

Add melted butter and mix.

Microwave in 10 to 20 seconds increments mixing after each increments.

You never know how much time it will take because so much depends on ingredients and kitchen temperature.

If you over cook and it's lumpy add a few drops of water and mix to get a smooth sauce again.
