Butter Tarts

Makes 12 to 15 tarts

Coconut Tarts

Ingredients  
Prepared pastry, cut in 4" rounds and placed in medium tart shells or 12-15 store bought unbaked tart shells.

Filling:
1 egg beaten
1/3 cup butter, you can use a bit less if you want
1 cup brown sugar
2 tablespoon milk
1 tsp. vanilla
1/2 cup raisins, currants or chopped pecans, optional
1/4 shredded coconut, optional

Instructions
Mix all ingredients except the coconut. If using coconut, add 1 tsp to empty tart shell, fill tart shells 2/3 full. Bake in a preheated to 450F oven for 8 minutes; reduce temperature to 350F and bake 15 to 20 minutes longer or until pastry is delicately brown.

 Variations:
Coconut tarts: Mix all ingredients,except coconut, omitting the raisins or nuts. Place 1 tsp. coconut in tart shell and then pour filling on top. Fill and bake as above. This makes very good coconut tarts.

Note: A very good butter tart recipe. Our family always likes it without the nuts and I use coconut instead.
