Ingredients
4 fresh or frozen boned trout or other boned fish (about 8 ounces each)
1 beaten egg
¼ cup milk
1 cup all-purpose flour
½ tsp. salt ¼ cup cooking oil
½ cup sliced almonds
2 tablespoons butter or margarine
2 tablespoons lemon juice
Instructions
Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Spread fish open. In a shallow dish combine egg and milk. In another shallow dish stir together flour and salt. Coat fish with flour mixture, dip in egg mixture then coat again with flour mixture. In a 12-inch skillet heat the oil. Fry half of the fish in hot oil, skin side up, for 3 to 4 minutes or until browned. Turn fish and cook 3 to 4 minutes or until browned and fish flakes easily when tested with a fork. Keep cooked fish warm in a 300 F oven while frying remaining fish.
In a medium skillet cook sliced almonds in butter until golden. Remove from heat; stir in lemon juice. To serve, place fish, skin side down, on a serving platter and spoon almond mixture over the fish.
