Dumplings

Makes 8 to 10 dumplings

2 cups flour
4 tsp. baking powder
2 tablespoons shortening
1 cup milk
½ tsp. salt

Stir flour, baking powder, and salt together. Work in shortening with tips of fingers or pastry blender. Add milk gradually and mix with a fork to make a soft dough. Drop by spoonfuls on top of hot stew; allow space for dumplings to rise. Cover pot. Boil hard for 12 to 14 minutes. Do not lift cover during cooking. Serve hot. May need to cook for 20 minutes.

Variations:

Cooking Instructions:  Cook 10 min. with no cover on the saucepan and 10 min. with a cover.

Sweet dumplings:  Add ½ cup sugar to the dumpling recipe to make a dessert.

Blueberry Dessert:  Place blueberries in the bottom of a pan and sprinkle sugar on top.  Add a bit of water, no more than ¼ cup. Place sweet dumplings on top.  Cook in the oven until done.

Caramel Dumplings, Poor mans pudding:  In the bottom of a pan place brown sugar, a bit of water, a bit of butter and place the sweet dumplings on top and cook in the oven. Note: The dumplings are cooked on top of the brown sugar caramel base.
