Makes about 8 pancakes
This recipe has reduced sugar.
Ingredients
1 cup flour
2 tsp baking powder
1/4 teaspoon salt
1 tsp white sugar
1 egg, beaten
1 cup milk
2 tbsps oil
1/4 tsp vanilla
Instructions
In a large bowl combine flour, baking powder, salt and sugar. In separate small bowl beat eggs, add milk, oil and vanilla, stir. Make a well in the center of flour mixture and pour in the egg mixture. Stir until moistened and still lumpy. Add more milk if mixture is too thick, one tbsp milk at a time, stirring gently.
Heat a lightly oiled griddle or frying pan over medium heat. Pour 1/4 cup batter onto the griddle for each pancake, makes eight 3 to 4 inch pancakes. Brown on both sides about 2 minutes, turning over when the pancakes are golden brown, have bubbly surfaces and hedges are slightly dry. Serve warm with maple syrup.

I used brown sugar and whole wheat flour. I served this to Brianna and Hank and they both loved it.
