Apple Streusel Muffins

Makes 12 muffins

Ingredients
1 1/3 cups whole wheat flour
½ cup oat bran
1/3 cup sugar
1 tsp. baking powder
1 tsp. cinnamon
¼ tsp. salt
1 1/4 cup apple, diced
1 egg, lightly beaten
1 cup milk
¼ cup vegetable oil

Topping:
1 tablespoon brown sugar packed
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Instructions
Preheat oven to 400F. In a large bowl, mix together flour, oat bran, sugar, baking powder, cinnamon and salt. Stir in apple.
In a separate bowl, combine egg, milk and oil; stir into flour mixture until just moistened. Do not over mix. Spoon batter into nonstick or paper lined muffin cups; fill 3/4 full.

Topping: Combine sugar, cinnamon and nutmeg; sprinkle over muffins.
Bake at 400 F for 12 to 20 minutes or until golden and firm to the touch.
