Ingredients2 cups dry beans, Yellow Eyed preferred, 1 lb.
Water
½ cup pork fat or bacon fat or vegetable oil 2 tablespoons brown sugar
½ cup molasses
¼ cup ketchup
1 tsp. salt¼ cup onion, chopped
2 tsp. dry mustard
Instructions
Soak bean overnight in water. Boil on the stove for 45 minutes or until skins burst. Drain. Add the other ingredients and stir. Bake in a slow oven 300 F about 2 hours. Nice dark beans.
