Beef Stroganoff

Serves 4 to 6

Ingredients
1 ½ lbs. beef tenderloin, cut in thin strips
Salt and pepper to taste
2 small onions, chopped
6 tablespoon butter
1 cup mushrooms, fresh or canned, sliced
1 cup sour cream, plus sour cream to add before serving
1 tablespoon flour
Pinch dry mustard
Egg noodles, cooked and drained, to serve with the stroganoff

Instructions
Cut meat into thin strips 2 inches long and season with salt and pepper.
Cook chopped onions in butter until golden.  Add sliced mushrooms to the onions, stir; add the meat and cook for 5 minutes.  Keep simmering.
Blend sour cream with the flour and mustard and pour into the pan with meat.  Stir well, cover the pan; simmer gently for 10 minutes or until the meat is tender. Meanwhile cook noodles.
Add more sour cream to beef before serving.
Serve with egg noodles.
