Makes 4 to 8 servings
2 cups blueberries
1/8 cup sugar (or use according to taste)
1 tablespoon water
1 tsp. cornstarch mixed with 1 tablespoon cold water
Instructions
Place blueberries, sugar, and water in a small saucepan. Cook over medium-low heat for about 10 minutes, until blueberries soften. Add the cornstarch mixture and mix well.
Hints:
This sauce can be spooned over the flapjacks and then roll the pancakes.
Use a bit more cornstarch to make the sauce thicker, if desired.
Use the sauce over pancakes, ice cream or pudding.
