Broccoli Quiche

Makes: 24 small tarts or one quiche

Broccoli Quiche

Ingredients
24 uncooked tart shells, or one uncooked pie shell

1 cup shredded old cheddar cheese
300 gram of frozen broccoli, or 2 cups fresh broccoli florets

Quiche filling:
1 pkg. 227 or 250 grams cream cheese
¼ cup milk
4 eggs
1 tsp. salt

Topping:
1 tablespoon grated Parmesan cheese
Paprika

Instructions
Preheat oven at 400F.
Sprinkle grated cheese in the bottom of uncooked tart shells or pie shell. Arrange broccoli on top of the cheese.

Quiche filling: Beat cream cheese, milk, eggs and salt.

Pour filling over broccoli.
Sprinkle top of quiche with 1 tbsp. of grated Parmesan cheese and paprika.
Bake at 400 F for 20 minutes for tarts, longer for pie or until a knife inserted in the center comes out clean.

Variations: You may add one tablespoon chopped chives to the egg mixture.
Use spinach instead of broccoli, if desired.

Hints: Warms up quick and makes a nice lunch.
Freezes well.
