GF Tea Biscuits

Makes 8 biscuits

GF Tea Biscuits


Ingredients 
1 ¾ cups gf flour mix* 
¼ cup millet flour
1 tsp salt 
1 tsp sugar 
4 tsp baking powder
¼ - 1/3 cup cold butter
1 egg beaten
~1/4 cup yogurt
Milk 

Instructions 
Mix dry ingredients and cut in butter until it resembles course breadcrumbs. Place in freezer. Beat an egg. Beat yogurt into egg until smooth. Top up egg mixture with milk until ~7/8 cup. Chill. 
Pour liquid into dry and mix until combined. Turn onto a rice floured surface and fold a few times. Cut out 8 tea biscuits. Cook at 230C (450F) for 10 minutes. 

Note: can make cheese biscuits by replacing half of the butter with cheddar cheese and adding additional cheese between then layers when folding. 

*GF (gluten free) Flour Mix
2 cups rice flour
2/3 cup potato starch
1/3 cup tapioca starch 
1 tablespoon xanthan gum
