Brown Sauce

 Makes one cup

Ingredients
2 tsp. chopped onion
2 1/2 tablespoon flour
2 tablespoon butter
1 cup liquid, consommé, brown stock, or water in which a bouillon cube has been dissolved
1/2 tsp. salt
Soya sauce or Worcestershire sauce, optional

Instructions
Sauté onion in butter until pale yellow. Stir in flour and salt; cook until mixture is brown. Slowly stir in liquid and cook until smooth and thick, stirring constantly.  To darken your sauce you may add a bit of soya sauce or Worcestershire sauce.  You can make gravy using the microwave; stir every 2 minutes. Serve as gravy with meats.

Variation: Add sautéed mushrooms or onions to the sauce.
