Makes 4 appetizers
Ingredients
2 Buns
Butter or olive oil, optional
Parmesan cheese, optional
Topping:
1 large tomato, diced
1/8 cup of finely chopped onion
½ - 1 tablespoon parsley
1 tablespoon olive oil
Salt and pepper as desired
Garlic as desired
Basil as desired
Oregano as desired
Instructions
Topping: Mix ingredients. Refrigerate 1-3 hours.
Slice buns in half and if desired spread butter or olive oil on top. Place the bun halves in the oven under the broiler until light brown. Put tomato topping on top. If desired, sprinkle Parmesan on top. Put buns under the broiler for 1-2 minutes. Cut in serving pieces. Serve warm.
If I would have known that grandchildren and great grandchildren were so much fun, I would have had them first.
