Makes one loaf
Ingredients
2 cups flour
1 cup sugar
2 tsp. baking powder
½ tsp. baking soda
1 tsp. salt
1 egg
Juice of one orange or 6-8 tbsp. of orange juice, plus water to make 3/4 cup
2 tablespoons vegetable oil
2 cups fresh cranberries, chopped coarsely or in half
1 tbsp. grated orange rind, optional
½ cup chopped walnuts
Instructions
Heat oven to 325 F; grease a loaf pan.
Sift first 5 dry ingredients into a large bowl.
Beat egg lightly in a small bowl.
Measure juice and add water to make 3/4 cup liquid. Add juice mixture and oil to the egg. Add liquids to the dry ingredients, mixing just to dampen.
Chop cranberries coarsely or cut them in half. Combine berries, rind and nuts; fold into batter and spoon into prepared pan. Bake 325 F for about one hour, 60 to 65 minutes or until toothpick inserted in the center comes out clean. Cool well before slicing and serving.
