Makes 6 servings
Ingredients
1 tablespoon vegetable oil
1 package of fettuccini, 500 grams
½ cup butter
½ cup half and half cream
1 cup mock crab meat, chop in bite size pieces
Instructions
Set a large platter in 100 F oven to keep warm.
Fill a large pot half full with water. Cover and bring to a boil over high heat. Add the oil and the fettuccini and cook uncovered according to box instructions or about 10 minutes until tender. Stir occasionally with a wooden spoon so the noodles do not stick together.
Meanwhile, put the butter and cream in a small pot. Place over medium heat until the butter melts. Add the crab meat and stir. Remove from heat and stir in ½ cup of Parmesan cheese.
Drain the cooked fettuccini, in a colander. Pour noodles into the warmed platter. Pour the sauce over the noodles. Toss lightly with 2 forks to mix.
Sprinkle the fettuccini with ¼ cup of Parmesan cheese and the parsley. Serve at once.
Variation: Use cooked shrimp or other seafood instead of crab meat.
If you're lucky, your children will call home once a week.
If you're really lucky, they wont ask for money.
