Ingredients
l tablespoon Dijon mustard
1 part Tarragon vinegar, about 1/4 cup
2 parts Extra Virgin olive oil, about 1/2 cup
Instructions
To make the dressing, put mustard in a bowl; slowly add the oil while stirring, then add the vinegar. Serve over your favorite salad.
Variations:
You may use ¼ cup water and ¼ cup oil instead of 1/2 cup of oil. You can use different vinegars and different oils; use strong vinegar with a mild oil or vise versa. When using strong mustard, try using balsamic vinegar and olive oil.

I substituted the tarragon vinegar with white wine vinegar, and 1/4 tsp herb the Provence and omitted the Dijon mustard.
