Linguine Primavera

Ingredients
2 tsp. olive oil
2 tsp. Margarine
1 garlic clove, minced
1 cup broccoli florets, blanched
1/4 cup thinly sliced carrots
1/2 medium tomato, seeded and diced
1/2 tsp. basil leaves
1 1/3 cup linguine, cooked
2 tsp. grated parmesan cheese
Dash of salt, dash of ground pepper

Instructions
Heat oil and margarine in a medium skillet; add garlic and sauté for 2 minutes. Add next 4 ingredients and cook, stirring often, for 5 minutes. Add linguine and cook, stirring often, 5 minutes longer or until hot. Sprinkle with parmesan cheese, salt and pepper.

Variation: When cooking vegetables, add 1/2 green pepper, s!iced thin, 1/2 cup red pepper, sliced thin and 1/2 purple or mild onion, sliced.
