Meatloaf

Ingredients

2 beaten eggs
¾ cup milk
2/3 cup fine dry bread crumbs or seasoned bread crumbs or 2 cups soft bread crumbs
1/4 cup finely chopped white onion
2 cloves garlic, minced
1 tablespoon  fresh parsley minced
1/2 tsp salt
1/8 tsp black pepper
1/4 tsp dried oregano crushed
1 to 1 1/2 pounds ground beef
1/4 cup catsup
1 to 2 tablespoons brown sugar
1 tsp dry mustard

Instructions
In a bowl combine eggs and milk; stir in bread crumbs, onion, parsley, salt, oregano, and black pepper. Add meat; mix well. Lightly pat mixture into an loaf pan 8 x 4 x 2-inch.

Bake in a 350° oven for 1 to 1 1/4 hours or until internal temperature registers 160°F. Spoon off fat. In a bowl combine catsup, sugar, and mustard; spread over meat. Bake for 10 minutes more. Let stand for 10 minutes before serving.
