Mushroom Fried Rice

Ingredients
1 egg
2 tablespoons soya sauce
3 tablespoons sunflower oil or other oil
1/4 cup fresh parsley, minced, optional
1/4 cup green onions, chopped
1/2 cup mushrooms, cut up

2 to 3 cups cooked rice, use cooked cold rice

Instructions
Heat the oil in a frying pan. Break the egg in the oil; break the yolk. Cut the egg into fine strips with a fork and stir. Add the rest of the ingredients, except the rice and soya. Stir and cook over low heat for about 5 minutes. Add the rice and soya; stir. Warm up for about 3 minutes and serve.

Variation: Add any vegetable that you enjoy in fried rice, green peeper is nice and frozen peas added to brown rice taste great. Cold rice gives the best results.
