Pizza

Makes three 9 pizzas

Ingredients
Crust:
1 pkg. active dry yeast
1/4 cup lukewarm water
1 tablespoon sugar
1 tsp. salt
1 tablespoon shortening
1 cup boiling water
2 3/4 cups flour

Topping:
3 tsp. olive or vegetable oil
Pizza sauce, see under Sauces or one can pizza sauce sauce or one can of tomato sauce
Spices
Trimmings, see suggestion below
Grated parmesan cheese
12 oz mozzarella cheese, shredded (or feta cheese)

Trimmings, optional:
Use green onions or regular onions; chopped black olives; pepperoni; chopped tomatoes; bacon; green or red pepper, chopped; mushrooms, sliced canned or fresh; broccoli, cut in small pieces. You can use almost any vegetable that you have in your refrigerator.

Instructions
Crust:
Soften yeast in lukewarm water for 10 minutes. Place sugar, salt, shortening and boiling water in a large bowl; stir until sugar dissolves. Cool to lukewarm; add yeast. Add 1 1/2 cups flour and beat until smooth. Add remaining flour or enough to make a dough just barely firm enough to handle; knead until smooth on a lightly floured board.

Divide in thirds; knead each piece into a smooth ball. Flatten, then roll with rolling pin until big enough to fit a lightly oiled 9 inch pie plate or pizza pan. Use oil to grease your pan, your dough will slide easy and you can stretch the dough with your fingers. Press the dough around the edges to make a slight rim. Let rise 15 minutes; then brush lightly with oil.

For a pizza sauce recipe, see sauce page. Spoon sauce on top and spread all over the crust. Add the trimmings and top with cheese. If you like a lot of sauce, use only grated parmesan cheese for the top of the pizza, this will allow the pizza trimmings and the bottom crust to cook.
Bake in a hot oven 425F for 20 to 25 minutes. Use cookie sheets if you do not have pie plates or pizza pans, you may have to cook longer. To check if the pizza is cooked, take a spatula to lift one side of the pizza crust to see underneath. Under the crust should be light brown to golden brown.

Variations:
Use ready made pizza crusts for the base. You may also buy the pizza mix in a box. Experiment and you will soon find your preference. Pizzas freeze well.

Easy pizza: Use English muffins cut in half for the pizza base. Cut and place the muffins in the oven to toast them a bit. You can put them under the broiler for 1 to 2 minutes. After top with pizza sauce or plain tomato sauce; add toppings and shredded Mozzarella cheese. Cook at 350 F for about 15 minutes. Can be frozen.

Be a great cook; let them put the toppings on their own pizzas.

  1. Use a KitchenAid mixer for the dough, adding more flour to make dough soft. Mixed dough for approximately eight minutes. Rub large bowl with oil. Placed dough in bowl covered with a towel in a warm spot until double in size. Then cut dough in four pieces, shaping in small pizzas. Cooked in 425F for 8 minutes, one at a time. Removed from oven, let cool for 4 minutes, then added topping. Broiled on high for 5 minutes or less until browned and cheese is melted.
