Raisin Pie

Ingredients
Filling:
½ cup brown sugar
1/8 cup butter or margarine
1 cup water
1 tablespoon cornstarch or more
1 cup raisin or more
1 tsp. vanilla

1 unbaked pie shell

Instructions
Cook sugar and butter until the sugar completely melts.  Add 1 cup of water and the raisins.  Thicken with cornstarch mixed in a bit of cold water. Add 1 tsp. vanilla.
Place filling in an unbaked pie shell.  Cook at 450 F for 10 minutes, then 350 F for 40-45 minutes.

Hint:  You may also use 1 tsp. lemon juice instead of the vanilla.
