Rhubarb Pie

Ingredients
Filling:
2 egg yolks
1 cup sugar
2 tablespoons flour
1 tablespoon butter
2 1/2 cups rhubarb, cut in 1 to 1 1/2 inch pieces

2 unbaked pie crust

Instructions
Beat egg yolks add sugar, flour and butter. Add rhubarb. Put pie filling in pie plate lined with a pastry crust. Top the pie with a pastry crust. Make a slit on top. Bake 450 F for 10 min. and then lower the oven to 350 F and bake for 40 to 50 min.

Variation: Bake like a custard pie, do not use a top crust. When baked top with meringue, if desired.  For a meringue recipe, see Gil's Cream Pie recipe.
